INGREDIENTS:

1 Tablespoon extra virgin olive oil
1 lb mild or spicy Italian ground sausage
1 medium onion, chopped
3 cloves garlic, minced
4 cups peeled and chopped potatoes
32 oz vegetable stock
1/2 teaspoon oregano
salt and pepper, to taste
1/2 cup heavy cream (or coconut cream for Paleo)
2 cup chopped kale
cooked bacon bits, (optional)

1 (15 oz) can Cannellini Beans, drained and rinsed
1/2 cup chopped sun-dried tomatoes
1/3 cup black olives
2-3 Tbsp olive oil or ghee
1 Tbsp honey
1 Tbsp balsamic vinegar
1 tsp oregano
1 tsp thyme
2 Tbsp fresh basil, chopped for garnish
Salt & pepper to taste
