  • No Bake Chocolate Bites

    On days when you are looking for a sweet treat without loading up on refined sugar and processed ingredients, these no bake chocolate bites (aka healthy bites) are great. So yes, you can have delicious treats that are actually healthy. I don’t know about you, but I’m all about that.

    These easy Paleo and gluten free no bake chocolate bites come together super quickly. They take only a few minutes to make and you can eat them for days if they last that long. 😉 My husband and I decided that these chocolate nut bites are the perfect after meal treat. I can probably snack on them during the day as well, without feeling guilty because they are packed with good stuff. Nuts, coconut oil, raw honey, freshly made almond butter and cacao powder. Yum!

    These bites are great for freezing too. If you want to make them ahead of time for a party or a holiday, just freeze them on a baking sheet, transfer to a zip lock bag and place back in the freezer. Take them out of the freezer 5 minutes before you are ready to eat them. 🙂

    How To Make No Bake Chocolate Bites

    What you need (for about 20 bites)

    1/2 cup raw honey

    1/2 cup almond butter

    1/4 cup raw cacao powder

    4 Tbsp coconut oil

    1/4 tsp sea salt

    1/8 tsp vanilla extract

    3/4 cup sunflower seeds

    1/3 cup almonds, chopped

    1/3 cup cashews, chopped

    1/3 cup pecans, chopped

    Preparation

    In a medium pan, combine honey, almond butter, cacao powder, coconut oil, sea salt and vanilla extract. Heat mixture over medium heat, stirring constantly. The mixture will be thick. Mix until all ingredients are well combined and smooth. Remove from heat.

    Add chopped nuts to the mixture and stir until well combined.

    Using a cookie scoop, form bites and place them on a parchment-lined baking sheet.

    Refrigerate for about 1 – 2 hours (or freeze for 30 minutes) until chocolate bites are firm. Store chocolate bites in the fridge. Hope you enjoy these no bake chocolate bites!

    what can be substituted for the coconut oil (allergies)?

      I haven’t tried them with anything else, but I am thinking that melted butter should work fine if you don’t have any dietary restrictions.

        Would cacao butter be a decent replacement for coconut oil for Jazmine? More like a chocolate bar but? These sound awesome and could do so many variations, thanks lots.
