    This fresh tomato salad is wonderful. Only 3 ingredients and you have a flavorful refreshing summer salad. Quick and easy to make, it can be served as a side dish or as a salad. Low carb, low fat, vegan and gluten-free.

    This refreshing and delicious tomato salad recipe takes no more than 5-10 minutes to make and goes wonderfully with any meal. It’s perfect to take to picnics, cookouts, and pot lucks.

    It’s perfect to serve alongside grilled chicken kebabs, maple mustard salmon or fish cakes!

    Ingredients you will need

    • Tomatoes
    • Red onion
    • Garlic cloves
    • Extra virgin olive oil
    • Fresh parsley (optional)
    • Salt

    How To Make Tomato Salad

    • In a medium salad bowl, combine diced tomatoes, red onion, and minced garlic.
    • To make the tomato salad dressing, simply toss the tomatoes with extra virgin olive oil, salt, and black pepper to taste. If you prefer you can also add a splash of white wine vinegar.
    • If you wish, you can garnish the tomato and onion salad with freshly chopped parsley.

    What are the best tomatoes to use in this salad?

    I used plum tomatoes for this recipe, but you can use whatever is ripe and what you have on hand will work well. Cherry, heirloom, and Roma are all great choices.

    Have you noticed how much tastier homegrown or farmer’s market tomatoes taste? It must be because they are grown with lots of love and care. 😉 And no pesticides.

    Can you make tomato salad ahead of time?

    Yes! In fact I like to make this a couple of hours ahead of time and leave it covered in the fridge to really let the flavors develop. Don’t let the salad sit too long though because the tomato juices will make the salad very watery. You can store the salad in an airtight container for up to 1 day.

    Because there is nothing perishable in the salad, like mayonnaise, it can be kept at room temperature for up to 6 hours. This makes it a perfect choice to take to picnics and potlucks.

    Recipe Tips

    • You can use any tomatoes you like in this salad, just be sure that they are perfectly ripe, but not too soft.
    • I like to finish the salad with parsley for some freshness, but you can use chopped basil or omit this if you like.
    • Taste the salad before serving and adjust the salt if needed.

    This tomato onion salad is so fresh and refreshing. You can serve it as a normal salad course, or side dish to almost any meal. I like to serve it with grilled chicken or baked salmon. Hope you enjoy!
