Butternut Squash Apple Soup

This Butternut Squash Apple Soup is delicious and filling. The combination of flavors is absolutely amazing and goes beautifully with a glass of Chardonnay.

KEY INGREDIENTS

Butternut Squash | Apples Carrots | Potatoes | Celery Sweet Potatoes | Onion Garlic | Butter | Olive Oil Vegetable Stock | Milk Yogurt | Salt | Pepper | Bacon

Add the chopped vegetables, apples, and onion to a casserole dish. Season and add butter. Cover with foil and bake at 350° for 40 minutes covered then 10 minutes uncovered. Cook the other half of the onion in some butter, then add  garlic. Pour in the vegetable stock, butter, and vegetables.

 INSTRUCTIONS

Puree and cook the soup for 10 minutes. Stir in the milk and cook for 5 minutes. Pour 1 cup of soup into a bowl, mix with yogurt, then pour back into the pot. Season with salt and pepper. Serve warm and garnish with bacon and parsley.
