CHICKEN AND RICE CASSEROLE

INGREDIENTS

extra virgin olive oil cremini or button mushrooms onion, carrots , garlic dry white wine, chicken stock sour cream heavy cream salt & black pepper Italian seasoning poultry seasoning uncooked white rice frozen peas chicken thighs or breasts, fresh parsley

Heat olive oil in a skillet and add mushrooms. Brown the mushrooms then add to the casserole dish.

 INSTRUCTIONS

In the same sauté pan add olive oil and onions. Cook until translucent. Add the carrots and garlic then sauté. Transfer to the casserole dish.

Add white wine to the pan. Let the white wine reduce then add chicken stock, and remove from heat. Stir in sour cream and heavy cream, salt, black pepper, Italian and poultry seasoning.

Add the uncooked rice, peas and chicken to the casserole dish. Then pour over the cream mixture and stir. Bake at 375°F for 45 minutes. Serve with fresh parsley
