GLUTEN FREE CARROT CAKE BARS

INGREDIENTS

almond flour| coconut flour coconut sugar | salt | baking soda  ground cinnamon | large eggs ground allspice | coconut oil vanilla extract | grated carrots chopped walnuts | raisins

cream cheese | butter powder sugar | vanilla extract

FROSTING

Whisk the dry ingredients – almond flour, coconut flour, coconut sugar, cinnamon, allspice, salt and baking soda in a bowl.

 INSTRUCTIONS

In another bowl, mix the wet ingredients – melted coconut oil, eggs, vanilla extract. Fold wet ingredients into dry. The batter will be thick.

Fold in carrots, raisins and walnuts. Spread the batter evenly in a lined baking dish. Bake at 350 F for 25 minutes. Remove and let cool.

While the carrot cake bars are baking, make the frosting. Combine cream cheese and butter. Add powdered sugar until frosting is smooth and creamy.

Once cooled, spread on frosting evenly over the cake. Sprinkle the remaining chopped walnuts on top and refrigerate for about 1 hour or until frosting is firm.
