Heat oil in a large pot. Add chopped cabbage, carrots, celery, onion, and minced garlic. Cook, stirring often for about 5 minutes.

 INSTRUCTIONS

Add diced tomatoes, chicken stock, thyme, salt, and pepper. Bring to a simmer, cover, and reduce heat to low.
