Heat sesame oil, add onion and ground meat, and cook, stirring, until it's no longer pink. Next, add in garlic, ginger, and chestnuts and cook until fragrant, then pour in the rice wine vinegar and sauces.
Mix in the coleslaw and carrots, season and cook, stirring, for about 5-7 more minutes, or until the cabbage is wilted. Then sprinkle with green onion and sesame seeds.
