Place olive oil, egg, dijon mustard, and salt in a food processor. Process until combined and a pale yellow color. While the food processor is going, slowly drizzle in the remaining oil until thick. 

 INSTRUCTIONS

With the food processor still running, add the lemon juice. The mayonnaise is ready to be used. Store in the fridge for up to a week.
