Prepare the artichokes by removing the stems, cutting the tops, and removing the spikey tips. Place the steam rack in the instant pot and add water, lemon slices and artichokes stem side down on the rack.
Replace the lid and seal it. Cook on high for 10 minutes and do a quick pressure release. Add any toppings you like and serve immediately.
