Make the Southern classic dish, Hoppin’ John easily in the Instant Pot. Made with ham hock, black-eyed peas and served over rice, everyone will love this traditional New Years’ Day meal.

KEY INGREDIENTS

Vegetables: onion, celery, bell pepper Seasonings: Thyme, pepper, bay leaves, salt, paprika Chicken broth Bacon and ham hock Black-eyed peas Cooked rice

Saute onions, celery, and bell pepper in the instant pot. Add thyme, smoked paprika, black pepper, salt and garlic. Stir.

 INSTRUCTIONS

Add the broth, bay leaves, bacon, and ham hock. Stir in the black-eyed peas.

Lock the lid. Set the steam release knob to the Sealing position. Press the Pressure Cook/Manual button and cook for 17 minutes on high pressure. – 

Once it ends, let it sit for 15 minutes. Turn the steam release knob to "Venting" to release the remaining pressure. Discard bay leaves and ham hock. Serve warm over rice.
