INSTANT POT JAMBALAYA

Make a delicious Jambalaya in a fraction of the time in your Instant Pot. Made with sausage, shrimp, and chicken, this flavorful rice dish is ready to serve in 30 minutes.
Celery | bell pepper | onion | garlic | diced tomatoes | green onion | chicken thighs | shrimp | Andouille sausages | tomato paste | oregano | paprika | chicken stock | Jasmine rice
Brown chicken & shrimp in the instant pot with butter using the Saute setting. Remove and place on two seperate plates.
Add sausage and brown for a few minutes. Add to the plate with chicken.
Saute celery, bell pepper and onion. Add in minced garlic, tomato paste, thyme, oregano, paprika, and cayenne pepper. Pour in ½ cup chicken stock.
Add browned chicken & sausage back to the pot, as well as the rice. Pour the remaining chicken stock & make sure the rice is covered.
Add diced tomatoes. Pressure cook for 7 minutes on high pressure. Natural release for 10 minutes. Finally, add the cooked shrimp and stir everything. Serve & enjoy!
