Rub the turkey in olive oil and seasonings. Then add to instant pot and sear on all sides. Transfer to a plate. Add the instant pot's wire rack, chicken broth and the turkey. Cook on high pressure for 25 minutes. Remove the turkey and let rest under some aluminum foil.
Take turkey drippings from the instant pot and pour into a cup through a mesh sieve, discarding all the large pieces. Make a slurry using flour and some of the turkey drippings. Add heavy cream, whisk the sauce until gravy is thick and smooth. Serve in a gravy boat.
