LEMON BARS RECIPE

Sweet, tangy and so delicious, these easy lemon bars are the perfect Springtime dessert. Full of fresh flavors, these simple bars are quick and easy to make.

INGREDIENTS

flour |  granulated sugar baking powder | salt vanilla | egg | unsalted butter

granulated sugar |  flour large eggs | lemon juice & zest salt | Powdered sugar

SHORTBREAD CRUST

LEMON FILLING

To make the crust, combine flour, baking powder, sugar and salt in a medium bowl. Add softened butter, egg and vanilla extract and fold  to make a dough.

 INSTRUCTIONS

Spread the crust over the bottom of the prepared dish. Bake at 350 F for 18 – 20 minutes. Remove from the oven and allow to cool.

For the lemon filling, whisk sugar and flour until well combined. Stir in eggs, lemon juice & zest, and a pinch of salt. Don’t overmix it.

Pour the filling over the crust and bake for 25 – 28 minutes. Remove and cool for 20 – 30 minutes on the counter, then refrigerate until cold and firm.

Remove from the pan and dust with powdered sugar, then cut into squares. Store the lemon bars covered in the refrigerator for up to 5-6 days.
