One-Skillet Tilapia Veracruz is a healthy Mexican dish with wonderful flavors. It takes less than 30 minutes to make and most ingredients you'll use are standard pantry staples.
Tilapia Filets | Tomatoes | Olive Oil Red Bell Pepper | Onion | Garlic Tomato Sauce | Black Pitted Olives Capers | Jalapenos | White Wine Oregano | Salt | Pepper
Add chopped tomatoes, sliced bell peppers, and onion to a large oiled skillet. Season with salt and stir. Reduce heat to medium, cover skillet, and cook for about 3-4 minutes until vegetables are tender.
Add tomato sauce, garlic, olives, capers, jalapenos and white wine. Season again with salt, pepper, and oregano. Then, season both sides of tilapia and place on top of the sauce. Cover and cook for 5-6 minutes.
