PALEO PANCAKES

These sweet and soft Paleo Pancakes are a delicious breakfast for those on a grain-free, gluten-free, dairy-free, Paleo or Whole30 diet.  Best ever Paleo Banana Pancakes!

Coconut Oil | Eggs Ripe Bananas | Almond Flour | Coconut Flour | Baking Powder | Vanilla Extract

Ingredients

Combine all ingredients (except berries) in a medium mixing bowl and mix with a mixer until smooth. The batter should be thick, but pourable.  Let the  batter sit for a couple of minutes.

INSTRUCTIONS

Using a ladle, scoop about 1/4 cup of the batter and pour into the preheated pan.   Cook for about 2 minutes on each side until the bottom of the pancake is golden-brown and the edges are firm.

Cook pancakes until batter is gone. Drizzle some maple syrup and top with berries (raspberries, blueberries and strawberries)

TOP TIPS

Separate the egg whites and beat them separately. Allow the batter to rest for a couple of minutes before cooking. Cook the pancakes over medium heat so they don’t burn. Don’t overcrowd the pan with pancakes.
