Pineapple | Red Onion | Ginger Red Bell Pepper | Raw Cashews Long-Grain Rice | Soy Sauce Toasted Sesame Oil | Cilantro Green Onion | Salt | Pepper
Heat sesame oil and cook the onion and ginger for 2 minutes, stirring constantly. Then stir in the pineapple, bell pepper, and cashew and cook until the vegetables are tender but still crunchy.
Add the rice, and soy sauce, and cook, stirring occasionally, for 4 minutes. Season to taste and sprinkle with the green onion and cilantro. Serve warm in a bowl or in hollowed out pineapple halves.
