Salmon fillet Salt, pepper Garlic powder Olive Oil Quinoa Cherry tomatoes Cucumber Red onions Basil
White wine vinegar Water Coconut sugar Garlic Jalapeno Salt, pepper
Bake the salmon & cook quinoa according to package instructions. Wash & dice the vegetables.
Flake the salmon with a fork & combine all salad ingredients in a large mixing bowl.
Drizzle with olive oil and the salad dressing on top, and toss gently to combine.
Adjust your cooking time according to the thickness of your salmon.
You can make ahead and freeze quinoa. Thaw it in the fridge overnight before using.
Be sure to rinse quinoa before you cook it to avoid a bitter taste.
