Toss carrots and red onion with maple syrup, olive oil, and half the seasonings. Spread the carrots on a prepared baking sheet and bake for 25-30 minutes. Be sure to turn the carrots half way through.
Toss Brussels sprouts with olive oil and spread on another baking sheet. Add to the oven after 10 minutes. Bake for 20 minutes turning halfway through. Remove carrots and the sprouts from the oven and toss into a serving bowl.
