Russian Salad Olivier

If you are used to traditional American potato salad, you will love this Eastern European Olivier – Russian Salad Olivier. This Russian salad Olivier is great for potlucks, BBQs and family gatherings.
russet potatoes | carrots | eggs ham | pickles | frozen peas apple | mayonnaise salt | pepper | green onions
Dice potatoes and carrots, then add to a pot with water and salt. Bring to a boil. Continue cooking for about 10-12 min.
While the potatoes and carrots are cooking, boil the eggs and dice the ham and pickles. Add to a mixing bowl with peas.
Add the potatoes and carrots to the bowl. Chop the boiled eggs and apple and add to the bowl. Mix in the mayonnaise.
Let cool for at least 30 minutes in the fridge. Serve in a large salad bowl or platter. Enjoy!
