Heat oil over a medium-high heat then cook the sausage patties. Mix together the sausage patties, mashed potatoes, eggs, flour, baking powder, salt, pepper and chives until combined.
Spray your waffle iron with olive oil and preheat it. When heated up add the mixture and cook for 3 minutes. Serve warm and feel free to top with avocado slices.
