Preheat oven to 350 F and line a baking sheet with parchment paper or aluminum foil. Place a wire rack in the baking dish.
Wrap each pineapple chunk with a piece of bacon and dip in the brown sugar. Place bites on a wire rack in the foil-lined baking sheet.
Bake at 350 for 25 minutes, or until bacon is cooked through and crispy. Secure with toothpicks and place on a platter. Let the bacon bites rest for about 5 - 10 minutes before serving.
