Simple and easy to make these homemade chicken meatballs are seasoned with parmesan and fresh parsley for one delicious bite. Quick to prep and ready to serve within 30 minutes.
Mix all ingredients in a bowl until well incorporated, but be careful not to overmix it.
Using a 1-inch scoop, take from the mixture and make meatballs using your hands to form the balls. (You can dip your hands in a bowl with water when they get too sticky to help make your meatballs smoother.)
Place on a parchment lined baking sheet and bake in a preheated 400 F oven for about 20 - 25 minutes, or until cooked through.
Take out from the oven and let rest for 5 minutes.
Serve with your favorite side and salad.
NOTES
Don't over mix the ground chicken with the other ingredients. Everything should be combined, but overworking it can produce tough and chewy meatballs.
If you prefer, you can cook these meatballs in a little oil in a skillet. Just be sure that they reach an internal temperature of 165F before serving.
These meatballs also make for a great appetizer, serve with toothpicks and your favorite dip.
