Easy and simple to make, this cilantro lime rice is an easy way to add flavor to your favorite dishes. Serve it as a side with your favorite Mexican mains or grilled meats for a filling and hearty meal.
Bring water or chicken stock to a boil, add rice, stir, cover, and reduce the heat to low. Simmer for 15 minutes until the water is absorbed and rice is tender.
Remove the pot from heat (keep it covered) and let it sit for 10 minutes.
Fluff rice with a fork, add the butter, minced garlic, lime juice, lime zest, chopped cilantro, and salt. Toss everything together and serve immediately!
NOTES
Be sure to check my top tips for How To Cook Rice for the best results.
Use fresh lime juice, don't be tempted to use bottled as it won't have the same fresh and zingy flavor.
If making ahead of time, let the cilantro lime rice cool completely before storing.
