Bacon Wrapped Apricots with Jalapenos

These sweet and spicy bacon-wrapped apricots are a big hit every time! Perfect appetizer for any party and family gathering.

INGREDIENTS

  • 48 dried apricots
  • 48 jalapeño pepper slices
  • 12 bacon slices, cut in four equal pieces (organic and pastured preferred)
  • 48 to othpicks

INSTRUCTIONS

  • Preheat oven to 400 F and line a baking sheet with aluminum foil and place a wire rack on top.
  • Cut the apricot horizontally, almost but not all the way through, and place one slice of jalapeño inside the apricot.Wrap the apricot in a piece of cut bacon, secure with a toothpick, and place on the wire rack. Repeat for remaining apricots.
  • Bake for 10 minutes. Flip the apricots and bake 10 more minutes, or until bacon is golden brown.
  • Enjoy!
