INGREDIENTS

  • 4 large carrots, washed and ends cut off
  • 1 zucchini, washed and ends cut off
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1/4 tsp organic honey
  • salt and pepper, to taste

INSTRUCTIONS

  • Shave carrots and zucchini into long thin strips, using vegetable peeler or mandoline. Add thinly sliced red onion to vegetables.
  • In a small bowl, combine olive oil, lemon juice, honey, salt, and pepper. Stir to combine and drizzle over the vegetables. Toss to coat. Garnish with walnuts and parsley.
