Wash, peel and cut carrots in about 3 inch long pieces and half lengthwise. And if needed, half the halves again (I hope that makes sense).
Combine olive oil, honey, sea salt and pepper in a bowl. Toss carrots with the honey-olive oil mixture. Spread carrots on a foil-lined baking sheet and bake at 400 F for about 30 minutes.
Sprinkle with chopped parsley and serve warm.
