Simple and elegant roasted beet and apple salad, walnuts, feta cheese, and maple vinaigrette. A beautiful dish for your Thanksgiving or holiday table.
Beets | Apple | Olive Oil Walnuts | Feta Cheese Salt | Pepper Maple Vinaigrette Dijon Mustard | Maple Syrup Champagne Vinegar
Trim beets, coat lightly with olive oil and wrap tightly in foil. Place on a baking sheet in a preheated oven and roast until tender and easily pierced with a knife. Allow to cool, then slip off the skins and dice into 1" cubes.
Mix beets, chopped apple and olive oil, season with salt and freshly ground black pepper to taste. Top with chopped walnuts, and crumbled feta cheese. Then mix all vinaigrette ingredients together.
