Season salmon, then place lemon slices and fresh dill on each filet, and place in vacuum-sealed bags. Next, heat water with a sous vide immersion circulator and immerse the salmon into the heated water bath.
Cook for 30-45 minutes for 1-inch thick filets, then discard the lemon and dill and pat the salmon dry. Heat olive oil and sear the salmon, skin side down, for a few seconds to enhance the texture and flavor.
