Ingredients

onion
sliced

garlic cloves

bell peppers (red, green, yellow)
sliced

boneless
skinless chicken breasts, sliced in strips

tablespoons
extra virgin olive oil

lime
juiced

homemade taco seasoning
Instructions
Preheat oven to 400 degrees.
Place chopped onion, garlic, peppers, and chicken in 9 x 13 inch baking dish or foil lined rimmed sheet pan.
Drizzle and coat with olive oil. Sprinkle with
taco seasoning
over the dish and toss to coat.
Bake in the oven for 25-30 minutes, or until the chicken is cooked through.
Top with lime juice and your favorite fajita toppings.
Notes
Use red, green and yellow bell peppers for a wonderfully
colorful
dish.
Slice the onions and peppers
lengthways
.
Cook the chicken until the meat thermometer reads
165 F.
Any baked chicken fajita
leftovers
can be stored covered in the fridge for up to 3 days and reheated in a skillet.
