  • Oven Baked Chicken Fajitas

    If you love easy recipes that are also healthy and require minimum preparation, this oven baked chicken fajitas recipe is for you. The chicken breasts are roasted with lots of fresh veggies and served with your favorite toppings. I love to serve these baked chicken fajitas over brown rice with a side of guacamole or tomato salad. I don’t eat tortillas because I avoid refined flour, but you could serve the chicken fajitas in tortillas if you wish. Another way to serve it is over sweet potatoes, salad, or right out of the skillet. Mmm.. so good!

    How To Make Oven Baked Chicken Fajitas

    What you need:

    1 onion, sliced

    1 green bell pepper, sliced

    1 red bell pepper sliced

    1 yellow bell pepper, sliced

    1 lb boneless, skinless chicken breasts, sliced

    3 tablespoons olive oil

    1 lime, juiced

    2 – 3 Tbsp homemade taco seasoning

     

    Preparation

    Preheat oven to 400 degrees.

    Place onion, peppers, and chicken in 9 x 13-inch glass baking dish.

    Drizzle and coat with olive oil. Sprinkle taco seasoning over the dish and toss to coat.

    Roast in the oven for 25-30 minutes, stirring once halfway.

    Top with lime juice and your favorite fajita toppings.
