Chicken Fajita Ingredients
- Onion & garlic
- Bell peppers (green, red and yellow)
- Chicken breast
- Extra virgin olive oil
- Lime
- Taco seasoning
How To Make Oven Baked Fajitas
- Preheat the oven and slice the chicken and veggies.
- Place onion, garlic, peppers, and chicken in a baking dish.
- Coat with olive oil and sprinkle over the taco seasoning and toss to coat.
- Bake in the oven.
- Serve on tortillas, top with lime juice and your favorite fajita toppings.

- Use red, green and yellow bell peppers for a wonderfully colorful dish.
- Slice the onions and peppers lengthways.
- Cook the chicken until the meat thermometer reads 165 F.

How To Reheat Chicken Fajitas
For best results, reheat the chicken and peppers in a skillet. This is not only the quickest way but also the vegetables and the chicken don’t get overcooked in the microwave.

These baked chicken fajitas are a great well balanced and healthy meal. Chicken breasts are high in protein and low in saturated fat and you get lots of vitamins and minerals form the onions and bell peppers. What’s the best taco seasoning to use?
I like to use my favorite homemade taco seasoning for this recipe. It’s quick and easy to make a big batch and there’s always some in my cupboard! You can, of course, use your favorite store-bought seasoning if you prefer.

Ingredients
- 1 onion, sliced
- 2 garlic cloves, minced
- 3 bell peppers (red, green, yellow), sliced
- 1 lb chicken breasts, boneless and skinless, sliced in strips
- 3 tablespoons extra virgin olive oil
- 1 lime, juiced
- 2 – 3 Tablespoon homemade taco seasoning
Instructions
- Preheat oven to 400 degrees.
- Place chopped onion, garlic, peppers, and chicken in 9 x 13 inch baking dish or foil lined rimmed sheet pan.
- Drizzle and coat with olive oil. Sprinkle with taco seasoning over the dish and toss to coat.
- Bake in the oven for 25-30 minutes, or until the chicken is cooked through.
- Top with lime juice and your favorite fajita toppings.
