How to make peanut butter

  1. Add peanuts to a high-powered food processor or high-powered blender  (like Vitamix). Pulse the peanuts until they are finely chopped.
  2. Process or blend on low speed for 1 minute continuously, then stop the machine and scrape down the sides. It will be dry and gritty. Continue processing several times and scraping down the sides until you have creamy and smooth peanut butter.
  3. It will turn from gritty to clumpy paste to thick and grainy and finally to smooth and creamy.

TIPS FROM NELI’S KITCHEN

Recipe Notes and Tips

  • Your food processor will need to run for around 10 minutes to make peanut butter. Allow the motor to cool while you scrape down the sides.
  • Be patient! Making peanut butter is a process, stick with it and you’ll get one creamy nut butter!
  • Be sure to use roasted peanuts.
  • It will keep in an airtight container in the refrigerator for several weeks.
  • For chunky peanut butter add 1/3 cup of chopped peanuts to the peanut butter.

How long does it keep?

Once you have made the butter, transfer it to a sealable jar or container and keep it refrigerated in the fridge. It will keep well for up to 3 months. It can also be frozen for up to 6 months.

Optional Add-ins

You can just make your peanut butter with just the peanuts, but you can easily sweeten it or make it salty if you prefer. If you want, you can use salted peanuts, in this case you may not want to add additional sea salt, and if you want a sweeter nut butter you can stir in some honey or maple syrup. You can also add cinnamon or cocoa powder.

For best results, add in any add-ins and spices after blending. Taste it, add the seasonings, and stir together.
