Steamed artichokes are quick and easy to make when you use an Instant Pot! Perfect to serve as an appetizer or side dish, these artichokes are easy to enjoy in less than 30 minutes and require minimal prep.
Prepare the artichokes for cooking by removing the stem and slicing off the top. Use kitchen scissors to snip off the spikey tip of each leaf.
Place the steamer rack into the bottom of the instant pot and pour the required amount of water inside. Drop a few lemon slices into the water and place the artichokes, stem side down, onto the rack.
Replace the lid and seal it properly. Move the valve to the “sealing” position to prepare for pressure cooking. Cook on High Pressure for 10 minutes and quickly release the pressure when done.
Serve immediately with desired toppings.
Notes
Add the right amount of water: 1.5 cups (8 qt), 1 cup (6 qt), ¾ cup (3 qt).
Wash artichokes just before cooking to keep them fresh.
Quick release pressure to prevent overcooking.
Cook artichokes whole - cutting before pressure cooking can make them mushy.
Serve with your favorite dipping sauce.
