This Cabbage and Sausage Skillet is an easy, one-pan meal packed with hearty flavors! Ready in about 40 minutes, it’s perfect for busy weeknights with minimal prep and maximum flavor.
Heat 1 Tbsp of olive oil in a large skillet. Cook sausage for a couple of minutes per side to brown on both sides. Transfer cooked sausage to a plate.
Add another Tbsp of olive oil in the skillet and heat over medium-high heat. Add the vegetables, and cook covered for about 5 -7 minutes until tender, stirring occasionally.
Add sausage and 1 cup water to the skillet, stir everything, and place in the preheated oven. Cook covered with a foil for about 25 minutes. Remove foil, and cook for another 5 minutes. Serve warm.

Get a good sear on the sausage – Browning the sausage first adds incredible depth of flavor. Don’t rush it - let it develop a nice golden crust before removing it from the skillet.
Cut veggies evenly – To ensure everything cooks at the same rate, slice the cabbage and other veggies into uniform pieces. This helps with even tenderness and better texture.
Don’t skip the cover! – Cover the skillet while cooking to trap moisture, this will help the cabbage soften beautifully without drying out. Remove the foil at the end to allow it to get a little caramelization.
Use a Staub or cast iron skillet – A high-quality cast iron skillet retains heat well and gives the best flavor development. And it's oven safe. Staub cast iron skillet is what I have and highly recommend, it will last a lifetime.
Customize it! – Add a pinch of smoked paprika for extra warmth, a splash of apple cider vinegar for a tangy kick, or red pepper flakes if you like a bit of heat.
