Ingredients

eggs

cup
cheddar cheese
grated
½
cup
feta cheese
or ricotta or goat cheese

tablespoons
butter

pinch of salt & pepper
Instructions
Preheat broiler to medium (450 F) and line a baking sheet with parchment paper.
In a large bowl, whisk the eggs, then stir in the cheddar, feta, 1/2 teaspoon of salt, and a few cracks of black pepper until well combined.
Spread some butter on each slice of bread and top with the egg mixture, spreading it evenly to the edges.
Broil for 7-10 minutes, or until golden brown.
Towards the end, watch closely, so they don't burn.

like baguette, sourdough, rye, or ciabatta.
Make sure to whisk the eggs well before adding the cheese - this helps create a smooth, even texture in the topping.

with too much egg mixture. I spread a generous but even layer to avoid spilling over as it cooks.
Keep a close eye while broiling
. The cheese can go from golden to burnt quickly - check at the 7-minute mark and monitor closely.
You can also bake a smaller batch in your toaster oven.
Let the toast cool
