Cheese and Egg Toast
Cheese and egg toast is one of those savory breakfast recipes I always come back to – especially when I need something quick and satisfying. This cheesy egg toast recipe is baked, simple to prep, and packed with high-protein goodness.
Growing up in Bulgaria, we called it Princess Sandwich (“Принцеси”), and every time I make it, it reminds me of my childhood. It brings me so much joy to introduce my kids to the Bulgarian meals I grew up with – and even better, they love them just as much.
If you’re craving something quick and warm in the morning, this Bulgarian toast is just the thing.

Ingredients and Sustitutions
For a full ingredients list with measurements, check the recipe card below.
- Eggs – You’ll need large eggs to make the base of this open-faced egg toast.
- Feta cheese – Crumbled feta adds a salty, creamy bite. Sometimes, I also use ricotta or goat cheese if that’s what I have on hand.
- Grated Cheddar cheese – A handful of shredded cheese melts perfectly on top for that classic egg and cheese sandwich flavor. Feel free to swap in your favorite hard cheese if you prefer.
- Butter – A thin layer of butter on the bread prevents it from getting soggy.
- Bread slices – Use your favorite bread or hearty sourdough slices for the best base.
- Fresh herbs (optional) – you can sprinkle some fresh dill or chives for garnish.
How To Make Cheese and Egg Toast
Step 1. Preheat. Set your broiler to medium (450 F) and line a baking sheet with parchment paper.
Step 2. Mix. In a large bowl, whisk the eggs, then stir in the cheddar, feta, salt, and pepper until well combined.
Step 3. Assemble. Butter each slice of bread and top with the egg mixture, spreading it evenly to the edges.
Step 4. Broil. Place on the baking sheet and broil for 7 – 10 minutes, or until golden and set. Watch closely near the end to prevent burning.
TIPS FROM NELI’S KITCHEN
Recipe Tips For Cheesy Egg Toast
Here are some simple tips to help you make the best cheesy egg toast:
- For the best results, I like to use firm, fresh bread like baguette, sourdough, rye, or ciabatta.
- Make sure to whisk the eggs well before adding the cheese – this helps create a smooth, even texture in the topping.
- Don’t overload the bread with too much egg mixture. I spread a generous but even layer to avoid spilling over as it cooks.
- Keep a close eye while broiling. The cheese can go from golden to burnt quickly – check at the 7-minute mark and monitor closely.
- You can also bake a smaller batch in your toaster oven.
- Let the toast cool for a minute or two before serving – it helps the topping set and makes it easier to eat.
How To Serve It
You can totally enjoy this cheese and egg toast on its own, but I love pairing it with fresh fruit or a few slices of crispy bacon for a more filling breakfast.
For a brunch spread, try adding avocado and tomato slices on the side. And if you’re feeling a little fancy, serve it with a Mimosa or a glass of ABC juice – so good!
