Thinly slice the skirt steak against the grain into strips and season the strips with Fajita seasoning.
Pour beef stock into the Instant Pot's inner pot. Place a trivet inside the pot.
Place a trivet inside the Instant Pot, and arrange the seasoned steak strips on the trivet.
