It’s no secret, that Mexican night is absolutely a thing in our house! We all love the flavors, they are just so warming and comforting!

Steak fajitas are are a beloved Tex-Mex dish, and now that I’ve worked out how to cook them quickly in the electric pressure cooker, they are a favorite meal on our menu. The seasoned steak is full of wonderful flavors, and it comes out so tender. This one is a keeper!

Ingredients

  • Beef stock: You can also use vegetable stock or water, but beef broth adds a great flavor.
  • Steak: Skirt steak works great for these fajitas, it cooks quickly and is so flavorful.
  • Seasonings: Fajita seasoning, either homemade or store bought, plus some salt and pepper. A mix of cumin, chili powder, paprika, garlic powder, and onion powder forms the backbone of your fajita seasoning. Adjust the heat by adding cayenne pepper or red pepper flakes if you like it spicy.
  • Vegetables: Bell peppers and an onion. They add sweetness and crunch.
  • To serve: Tortillas, limes and sliced avocado.

How to make Instant Pot Steak Fajitas

  1. Prepare the steak. Thinly slice the skirt steak against the grain into strips and season the strips with Fajita seasoning.
  2. Add liquid. Pour beef stock into the Instant Pot’s inner pot. Place a trivet inside the pot.
  3. Add beef. Place a trivet inside the Instant Pot, and arrange the seasoned steak strips on the trivet.
  4. Add vegetables. Add sliced bell peppers and onions, then season with salt and freshly ground black pepper.
  5. Cook. Secure the lid, set the valve to ‘Sealing’, and cook on High Pressure for 3 minutes. When the timer goes off, do a quick release to avoid overcooking the steak.
  6. Serve. Serve by assembling the tortillas with the steak strips, bell peppers, and onions. Top with avocado slices and a squeeze of lime juice. Enjoy!

  • Place the steak in the freezer for 10 minutes. This will make it easier to cut into slices.
  • Slice the steak against the grain into thin strips. This helps break down the muscle fibers and ensures each bite is tender.
  • Tailor the heat to your preference by adjusting the amount of chili powder and adding a little cayenne to the seasoning or fresh jalapeños or hot sauce.
  • Don’t overcook the steak. Overcooking can make the steak tough. Follow the recommended cooking times for tender results.
  • Vegetables need seasoning too. A pinch of salt and a dash of spices can elevate their flavor.

What’s the best steak to use?

Skirt or flank steak are the best cuts of beef to use for fajitas. These cuts are flavorful and become incredibly tender when cooked in the Instant Pot. This cut is also budget friendly, but you can use sliced sirloin if you prefer.

What do you top fajitas with?

Once the beef and veggies are cooked, pile them into large flour or gluten-free tortillas. They are great as they are, or top them with:

  • Sour Cream
  • Guacamole
  • Salsa
  • Shredded Cheese
  • Sliced Jalapenos

Recipe FAQs

Can you use taco instead of fajita seasoning?

Taco and fajita seasonings are similar, but fajita seasoning has more cumin and less chili powder and oregano. You can use your favorite brand of store bought seasoning mix, or make your own batch.

Is it normal to have a bit to much liquid in the IP after cooking?

That is totally normal. You will get some juices from the meat and vegetables as they cook. Simply use a slotted spoon to take out the fajitas. You can store any leftover steak in the liquid to keep it juicy. You can also save it and pour it over rice, cooked veggies, etc.

Ingredients  

  • ½ cup beef stock, (or vegetable stock or water)
