When you need to get a tasty dinner on the table in a hurry, Mexican is a great go-to. These homemade chicken fajitas are loaded with flavor, but they are so simple to make and are perfect after a busy day.
Seasoned and tender strips of chicken breasts are loaded into tortilla wraps with sautéed bell peppers and finished with your favorite Mexican toppings.

Fajita Ingredients
- Chicken: Use boneless skinless chicken breasts for this recipe. Cut it into long strips before seasoning and cooking.
- Bell peppers: I like to use a mix of red, green and yellow peppers. Like the chicken, cut them into long slices before cooking.
- Onion: Cooked with the bell peppers til caramelized.
- Lime and fresh cilantro: Mixed in with the cooked chicken and peppers for a burst of fresh flavor. If you don’t like the taste of cilantro, you can use parsley.
- Chicken Fajita seasoning: Chili powder, teaspoon ground cumin, paprika, kosher salt, pepper, garlic powder, onion powder and cayenne.
How To Make Chicken Fajitas
- Season the chicken. Cut the chicken breasts in half horizontally and then in strips. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it in.
- Cook the chicken. Heat olive oil in a large cast iron skillet over medium high heat. Sear the chicken breasts for about 5 minutes on each side. Then remove them from the pan and let them rest for a few minutes covered with foil.
- Saute the bell peppers and onion. Saute bell peppers and onion in the same skillet over medium heat for a few minutes until caramelized.
- Mix together. Add the chicken back into the skillet, squeeze fresh lime juice on top and stir everything together.
- Wrap it up. Serve immediately with tortillas and extra toppings.

- Slice the chicken into pieces of a similar thickness so that they cook through evenly.
- Make sure that the chicken is cooked through before removing it from the skillet.
- If you like you can add in other veggies like mushrooms or zucchini.
- Adjust the seasoning to suit your spice tolerance. Use as much or as little cayenne pepper as you like.
Can you make it ahead of time
These healthy chicken fajitas are best served as soon as they are made so that the chicken strips are nice and juicy. If you do have leftovers, store the cooked chicken, peppers, and onions in an airtight container for up to 3 days. You can reheat in the microwave or in the oven at 350F on a baking sheet till warmed through.
How do you serve them
I love to serve the homemade fajitas chicken and vegetables in tortilla wraps, then top them with favorites like:

I prefer to use chicken breast for this recipe, you can use chicken thighs if you have them, just be aware that they will take a little longer to cook through. You can also make steak fajitas using this recipe with strips of steak which would require less cooking time. You could also make shrimp fajitas. For a meat-free version, you could use plant-based protein like beans or extra firm tofu.
