This healthy vegetable side dish is the perfect addition to any meal. Roasted broccoli takes minutes to prep and you just need a few ingredients for this delicious vegan side.
Preheat oven to 425 F and line a baking sheet with parchment paper or aluminum foil.
In a large bowl, toss broccoli florets and minced garlic with olive oil, season with salt and pepper.
Arrange florets in a single layer on a baking sheet and roast for about 15 minutes, until broccoli is fork tender and lightly browned. Taste and adjust seasoning of necessary. Serve warm
Notes
Cut the florets into similar sizes so that they cook evenly.
Don't overcrowd the florets on the baking sheet. If you do they will steam and get soggy rather than roast.
The broccoli should be fork tender when you remove it from the oven.
