This healthy vegetable side is vegan and naturally gluten-free and is a must for any broccoli fan. Roasting it creates a wonderful texture and enhanced flavor.

Ingredients

  • Broccoli: Cut into florets. If you can, buy organic.
  • Garlic: Use freshly minced garlic for the best flavor:
  • Salt and pepper: For seasoning.
  • Extra virgin olive oil: To help crisp up the cauliflower as it roasts. It also helps to keep the broccoli nice and green.

How to roast broccoli

  • Preheat oven to 425 F and line a baking sheet with parchment paper or aluminum foil.
  • In a large bowl, toss broccoli florets and minced garlic with olive oil, season with salt and pepper.
  • Arrange florets in a single layer on a baking sheet and roast broccoli in oven for about 15 minutes, until broccoli is fork tender and lightly browned. Taste and adjust seasoning of necessary. Serve warm

Can you make it ahead of time?

If you are planning to serve this oven roasted broccoli as part of a bigger feast, you can make this dish ahead of time for ease. You can cut and season the broccoli the night before and keep it covered until you are ready to roast it.

You can also make the recipe the day before and reheat the broccoli in the oven at 450F for 5 minutes until heated through.

Can you use frozen broccoli?

I much prefer to use fresh broccoli for this recipe, but you can make it with frozen broccoli. There’s no need to defrost frozen broccoli first. Just season it as per the recipe and roast in the oven. Just add a minute or two to the cooking time.
