Fall and winter are the perfect seasons for roasted vegetables. I love to add some olive oil and spices to the vegetables, and they become a deliciously easy side dish to any meal.

I love fresh raw broccoli and I must admit that this recipe is great even without roasting the broccoli. While I was tossing the broccoli with the olive oil mixture, the aroma of the olive oil and raw garlic was so tempting that I had to try some. I couldn’t stop eating them. I may or may not have gobbled up a good portion of the broccoli. Yum! I can eat this every day.

How To Make Roasted Broccoli with Bacon

Ingredients

6 cups broccoli florets

4 slices of bacon, cooked and chopped

2 Tbsp extra virgin olive oil

2 cloves garlic, minced

1/2 tsp sea salt

1/2 tsp black pepper

Wash and cut broccoli into medium florets.

In a bowl combine 2 Tbsp extra virgin olive oil, 2 minced cloves of garlic, 1/2 tsp black pepper, and 1/2 tsp sea salt. Add broccoli and toss well until all florets are covered in the olive oil mixture.

Spread broccoli on a foil lined baking sheet and roast at 400 F for about 12 minutes until tender.

While the broccoli are roasting in the oven, cook bacon and cut in small pieces.

When broccoli are ready, mix in bacon and serve warm.

    This was so easy and delicious! I love to find new ideas to feed my picky eater that also has food allergies. This was honestly a no brainier. Not sure how it hadn’t crossed my mind before, but I’m thankful to have found it and it will be a regular go to for me!
