Sweet potatoes are the best! And this Stuffed Sweet Potatoes recipe is so delicious and flavorful! Filled with so many nutrients – potassium, calcium, folate, beta-carotene, vitamin C. Did you know that sweet potatoes also are a skin superfood because of the high levels of vitamin A they contain? Of all the vegetables, sweet potatoes are my favorite.

This sweet potato recipe is unlike any other sweet potato dish you’ve ever had. It is full of flavor, healthy, filling and the perfect quick weeknight meal. The filling is a deliciously seasoned combination of sausage, red bell peppers, and onion, while the light sweetness of the sweet potato compliments the filling beautifully.

How To Make Stuffed Sweet Potatoes

What you need for this recipe

1 lb grass fed sausage, browned

4 sweet potatoes

2 red bell peppers, chopped

1 medium onion, finely chopped

salt, to taste (about 1/2 tsp)

2 Tbsp extra virgin olive oil

 

Preheat oven to 400 F and line a baking sheet with foil.

Thoroughly scrub and rinse sweet potatoes. Prick potatoes multiple times with a fork or knife. This helps the sweet potatoes to separate from the skin. (You can place them on a kitchen towel when you prick them if you don’t want the sweet potatoes to slide on the countertop) 

Stuffed Sweet Potatoes

Rub the sweet potatoes with oil of choice and place them on a foil lined baking sheet. Bake potatoes at 400 F for about 45 minutes or until tender.

While the potatoes are baking, prepare the filling. Brown the sausage, chop onion and red bell pepper.

Heat 1 Tbsp extra virgin olive oil on medium high heat and add the vegetables. Season with a dash of salt. Saute the vegetables for about 5 minutes until onion is translucent.

Stir in browned sausage and cook a couple of minutes.

When the sweet potatoes are ready, make a slit on top of each potato and top with filling.
