Preheat oven to 400 F and line a baking sheet with foil.
Thoroughly scrub and rinse sweet potatoes. Prick potatoes multiple times with a fork or knife and rub with oil. This helps the sweet potatoes to separate from the skin.
Bake potatoes at 400 F for about 45 minutes or until tender.
While the potatoes are baking, prepare the filling. Brown the sausage, chop onion and red bell pepper
Heat 1 Tbsp extra virgin olive oil on medium high heat and add the vegetables. Season with a dash of salt. Saute the vegetables for about 5 minutes until onion is translucent. Stir in browned sausage and cook a couple of minutes.
Make a slit on top of each sweet potato and top with filling.
