Tomato Salad Recipe
This tomato salad is wonderful. Only 3 ingredients and you have a flavorful refreshing summer salad. It can be served as a side dish or as a salad.

Ingredients
4
tomatoes
diced
¼
of large red onion
finely chopped
2
cloves
garlic
minced
3
Tablespoon
extra virgin olive oil
fresh parsley
optional
salt
to taste
Instructions
In a medium salad bowl, combine diced tomatoes, red onion, and minced garlic. Season with salt to taste and add about 4 - 5 Tbsp olive oil.
If you wish, you can garnish the tomato salad with freshly chopped parsley.
Notes
You can use any tomatoes
you like in this salad, just be sure that they are perfectly ripe, but not too soft.
I like to finish the salad with
parsley
for some freshness, but you can use chopped basil or omit this if you like.
Taste the salad
before serving and adjust the salt if needed.
