Why you will love this chicken meatballs recipe!

    • Healthy: High in protein and low in saturated fat, they are a great alternative to beef meatballs. Baked rather than fried for an easy addition to any well balanced meal.
    • Make ahead: They are great for meal prep throughout the week and are also freezer friendly.
    • Easy and quick: It takes minutes to make a batch of these meatballs and they are oven baked leaving you to get on with the rest of the meal.

    Ingredients

    • Ground chicken: Ground chicken is a great alternative to beef. It contains less saturated fat and calories.
    • Egg: To bind the ingredients together.
    • Panko breadcrumbs: I prefer to use panko, but you can use plain breadcrumbs too. Use gluten-free breadcrumbs if you have an intolerance.
    • Milk: You can use any milk you like in this baked chicken meatballs recipe, dairy or plant based both work well.
    • Oil: I like to use olive oil, but vegetable or canola will work just fine.
    • Seasonings: Garlic, parsley, Italian seasoning, salt and pepper.

    How to make chicken meatballs

    • Mix all ingredients in a bowl until well incorporated, but be careful not to overmix it.
    • Using a 1-inch scoop, take from the mixture and make meatballs using your hands to form the balls. (You can dip your hands in a bowl with water when they get too sticky to help make your meatballs smoother.)
    • Place on a parchment lined baking sheet and bake chicken meatballs in a preheated 400 F oven for about 20 – 25 minutes, or until cooked through.
    • Take out from the oven and let rest for 5 minutes.
    • Serve with your favorite side and salad.

Can you make these with other ground meats?

These healthy chicken meatballs are delicious, but you can easily make them with other ground meats. Turkey, pork, and beef all work well. I prefer to use lean ground meat for these for a healthier option.

What do you serve them with?

These ground chicken meatballs are great to serve on pasta, tossed in your favorite sauce, or, serve them as is with your favorite salad, veggie, or potato side dishes. Try them with:

    How long do they keep?

You can keep the uncooked meatballs covered in the fridge for up to 2 days, and if cooked, they will keep well for up to 4. Cooked meatballs can be reheated in the oven at 350F for 10 to 15 minutes until heated through.

    Can you freeze them?

You can freeze these meatballs either cooked or uncooked, either way, they will keep well for 3 months. Thaw the meatballs in the fridge overnight before reheating or cooking.
