In a large pot, heat oil and add chopped cabbage, carrots, celery, onion, and minced garlic. Cook, stirring often, until onion is translucent.

 INSTRUCTIONS

Add diced tomatoes, stock, thyme, salt, and pepper. Bring to a simmer, and reduce heat to low. Simmer, stirring occasionally, until all vegetables are tender.
