    Sometimes the classics are the best, and this Caesar dressing is no exception. It’s rich and creamy and is the perfect balance of salty, earthy, and fresh. It’s so easy to make a batch and can be used with Caesar, or any other salads.

    I love this dressing on Caesar Salad, Chef Salad or Cobb Salad!

    Caesar Dressing Ingredients

    Here is everything you need for this amazing dressing:

    • Garlic: Use freshly minced garlic cloves for a nice kick of flavor.
    • Lemon juice: Use the juice from one lemon. It’s best to avoid bottled juice, fresh is so much zingier.
    • Dijon mustard: I like to use Maille dijon. It has a great bold flavor.
    • Worcestershire sauce: Worcestershire sauce has a wonderful savory flavor as well as acidity. It also adds a slight sweetness to the Caesar dressing.
    • Anchovy paste: Anchovy paste is wonderfully salty and gives this classic dressing so much flavor.
    • Mayonnaise: I use homemade mayo or full-fat mayo as it is much richer, but you can use low fat if you prefer.
    • Parmesan: Use freshly grated, rather than pre-grated parmesan. Pre-grated can be quite dry.
    • Salt and pepper: To season.

    How to make Caesar dressing

    • In a medium bowl, whisk together the minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, and anchovy paste.
    • Add the mayonnaise, grated Parmesan, salt, and pepper, and whisk until well combined. Taste and adjust to your liking.

    How long does it keep?

    Once you have made the Caesar salad dressing, store it in an airtight jar or bottle in the fridge. It will keep well for up to a week. I like to make a double batch to enjoy on my lunchtime salads throughout the week. It’s so delicious, you will want to drizzle it on everything.

    Do you have to use anchovy paste in the dressing?

    I love the flavor that the anchovy paste adds to this Cesar dressing and anchovies are a traditional ingredient. You can use mashed anchovies or anchovy paste. If you really don’t want to use the paste (I know some people really don’t like it!), you can omit it or use some capers in the sauce to get that briny flavor.

    No-egg Caesar dressing

    You will find that a lot of Caesar dressing recipes contain raw egg yolks and oil. This is to emulsify the dressing and add richness. I’m not too keen on using raw eggs and I found that mayonnaise recreates that creaminess and I always have some homemade mayonnaise in my fridge!

    • It’s really quick and easy to whisk this classic Caesar dressing together by hand, but you can use an immersion blender to combine the ingredients if you prefer.
    • Use freshly grated parmesan and freshly squeezed lemon juice for the best flavors.
    • Make it vegetarian by omitting the anchovy paste.
