Ingredients
- Dates: I like to use Medjool dates rather than regular, or Deglet Noor, dates. They are softer, larger and have a richer flavor.
- Bacon strips: Use natural, nitrate free bacon if you can.
- Goat Cheese: I like to use a spreadable goat cheese for ease. The creaminess and tangy flavor works so well with the sweet dates and salty bacon.
How to make bacon wrapped dates
- Preheat the oven to 400 degrees Fahrenheit and line a rimmed baking sheet with heavy-duty foil or parchment paper.
- Slice the dates lengthwise on one side to create an opening. Remove the pit.
- Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
- Cut the bacon slices in half. Wrap each date with a half slice of bacon and secure with a toothpick.
- Arrange evenly on a baking sheet and bake for 15 minutes at 400 F oven. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.
How far in advance can you make them?
You can stuff the dates with the goat cheese and wrap them in bacon a day before you plan to serve them. Keep them covered in the fridge until you are ready to bake and serve them.
How do you pit and stuff dates?
The easiest way to remove the stone from a date is to use a paring knife. Cut lengthways down half of the date to hit the pit. Gently ease the date open and remove the pit. You can also buy pitted dates if you are short on time.
Recipe Variations
These bacon wrapped dates are pretty delicious as they are, but they are easy to adapt to suit your tastes. Drizzle over some honey or maple syrup before they go in the oven for some extra sweetness, or try swapping the goat cheese for blue cheese or cream cheese. For a vegetarian option, simply omit the bacon.

Recipe Notes and Tips
- Don’t use thick cut bacon to wrap the dates. It will take too long to cook through and crisp up.
- You can serve the dates with or without the toothpicks.
- Leftover bacon wrapped dates can be stored in the refrigerator for 3 days. Reheat them at 350F for around 7 minutes until heated through and the bacon is crisp.
