Easy to make, they require very little prep time and you just need a few simple ingredients. The wings are baked before being tossed in the most delicious buffalo sauce for one delicious bite.

  • Easy to make: Just season the wings and then pop them in the oven, once baked, toss them in the sauce. This is a great fuss-free method to make the most delicious homemade wings. And you don’t need any special equipment like a deep-fryer or air-dryer.
  • Great for a crowd: Buffalo chicken wings are always a crowd-pleasing appetizer, just serve with your favorite dips and some celery and carrot sticks. The recipe is easily halved and doubled too depending on how many you are serving.
  • Healthier: Because these hot chicken wings are baked in the oven, you only need to use a little oil to get them nice and crispy. A much healthier option than deep frying.

Ingredients

  • Wings: Use the wingette and drumette, without the tip. Pat them dry with paper towels before seasoning to help them crisp up.
  • Oil: You need a little oil to get the wings crispy and bake evenly. A neutral high heat oil like coconut oil or vegetable will work well.
  • Seasonings for the wings: Garlic powder, paprika, salt, and black pepper. If you like them extra spicy, you can also add a pinch or a teaspoon cayenne pepper.
  • For the buffalo wing sauce: Unsalted butter, hot sauce, honey, and salt.

How to make buffalo wings

  • Preheat the oven to 400° and line a rimmed baking sheet with parchment paper or foil and place a wire rack over it.
  • In a large bowl, toss chicken wings with oil and season with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly. Transfer to the prepared baking sheet.
  • Bake until chicken is golden, and skin is crispy, 45 – 50 minutes, flipping the wings halfway through.
  • In a small saucepan, whisk together hot sauce, honey and butter. Bring to a simmer and cook until butter is melted and slightly reduced, about 2 minutes.
  • Transfer the chicken wings to a large mixing bowl and pour the buffalo sauce over the wings. Toss the wings in the hot sauce mixture to coat evenly.
  • Serve warm with blue cheese dip or ranch dressing.

How do you get chicken wings crispy?

These spicy chicken wings are tossed in a sauce once they are cooked, so while they have a little crispiness to them, they aren’t like deep-fried wings. To get the skin crispy, pat any extra moisture off of them before seasoning them so that they don’t steam when they are baked. Cooking them on a wire rack also helps as the hot air circulates all around them.

Another trick is to coat them in baking powder after you season them. You won’t taste the baking powder in the final product.

How long do leftovers keep?

These baked buffalo wings are best served as soon as they are ready, but if you have leftovers, they’ll keep well covered in the fridge for up to 4 days. They can be reheated at 360F for 15 to 20 minutes to warm through. You can season the wings up to 24 hours ahead of time so they are ready when you want to cook them.

These buffalo chicken wings are great to serve with a blue cheese sauce or ranch dressing, along with some celery sticks and carrot sticks. They make a great appetizer to share with friends. You can also serve them up as a fuller meal with a side salad, wedges, or fries.
